Days Until Christmas!
Sorry it's been so long. This recipe was inspired partly by my mum, partly because of having to adhere to the conditions of finding a decent meal to eat whilst dieting. The result is delicious and very low calorie. You will need:

2lb chicken breast or tenders
3 bell peppers (i use 3 different colours to make it look nice)
1 large onion white or red
A bottle of teriyaki sauce (try and find one with sesame seeds in)
Sour cream (to your taste)
Refried beans (to your taste)
Shredded cheese (again to your taste)
Vegetable oil
1 package of Uncle bens spanish style microwave rice
Flour or corn tortillas or both (we used mission flour carb balance, for the sake of calories but that's up to you)

Start by preparing the chicken, use a knife to chop it into small equal size-ish pieces and put them to one side. If using tenders rather than chicken breast try and cut out the white tendons that come in them. Next cut the bell peppers up into strips, i normally remove the middle by going in from the top then cut the whole thing in half vertically. Then rinse out the middle to get rid of any seeds, cut into strips and cut the strips in half. Put them to one side and chop up the onion into small piece and add the onion to the peppers.

Now you will need to prepare two large frying pans, add a generous amount of vegetable oil to the one being used for the veg as there will be a lot of veg and a slightly smaller amount to the one for the chicken. Heat both pans on medium, wait for them to heat up then add the chicken and veg to their respective pans. Stir both often for about 15 minutes.

Once the chicken looks almost done and the veg has softened add a generous amount of teriyaki sauce to both. Stir often for another ten minutes or so to get the sauce to stick. While you are doing this prepare the refried beans in a pot and microwave the rice. Use a colindar to drain the veg and chicken.

Serve to your taste using the rice, beans, sour cream and cheese on tortillas. I have been told that these are the best fajitas that people have ever had before and i have to agree they are delicious. If you had the patience to stick with me on this then ENJOY! I will be updating my blog again with more recipes from now on so keep an eye out.

Crumpets are definitely a foodstuff that I miss. For some reason they are hard to find in the USA. With the exception of Kroger, which does carry them but they are very thin for some reason, no regular store supplies them. So, I thought I would give making my own a go, I was very pleasantly surprised! For those of you who have not tried them before, they look like English Muffins but have a very different taste and texture. This recipe produced great, light crumpets, with a kind of sourdough flavour.

Be aware you will need to leave the mixture so that the yeast activates, this can take 1-1.5 hours.

What you will need:

115ml semi skimmed milk, warm

225g all purpose flour

3g dried yeast

1 tsp sugar

150ml finger-warm water

1/2 tsp salt

1/2 tsp baking powder

Vegetable oil for frying


Add the milk, flour, yeast and sugar together in a large bowl, whisk gently until combined. Add half the tepid water and beat together. Slowly add more water until mixture is of a similar consistency to thick cream, thick and smooth. Cover with cling film and let sit in a warmish place with no draughts for 1 - 1.5 hours until the batter looks like foam on the top. See below:

Now for this next part you will need cooking rings of a sort. I do not have these so I improvised by cutting both ends off of a can that previously contained beans. Cleaned this out very well and removed the label, this worked beautifully. Heat a frying pan to medium (I put it on five and this was hot enough and worked great). Grease the bottom of the pan and grease your cooking ring (or can) well on the inside. Once pan is hot place the cooking ring (or can, greased side down) onto the frying pan. Pour the mixture into the ring (or can), I would say just above half a ladle is sufficient. 

Let cook for around 3 minutes, you will see loads of tiny bubbles on top and the batter will look like it is separating from the sides when this part is done. Gently remove the ring (or can) so that the crumpet is standing by itself. Use a spatula to flip the crumpet and cook this side for another 1-2 minutes (you can lift it to see if it is golden brown). Once done remove from pan and place on a plate to cool. Repeat this method with all the remaining batter. These are best lightly toasted and served with butter. They can be served with jam, syrup, bacon, anything you want. Enjoy!
This is definitely one of my favourite recipes. Perfect for cold winter nights when you want a nice hearty meal to warm you up. Very simple and doesn't take too long. Also stretches far so ideal for a family meal.

What you will need:

2.5 - 3 lb ground beef

2 medium onions

6 brown gravy packets

Salt and pepper

1 pack of 2 rolls shortcrust pastry (refrigerated)

1 pack of 2 sheet puff pastry (frozen until day of cooking, let sit in fridge for six hours to defrost)

Worcestershire sauce

Mixed frozen vegetables (or fresh, I use peas, carrots and sweetcorn, the smaller the better)

1 egg


Preheat oven to 360 degrees Fahrenheit. Line two medium round metal pie dishes with the unrolled shortcrust pastry. Be sure to place them as evenly as possible and poke holes in the dough to avoid bubbles forming. Place pie dishes in oven until the dough begins to turn brown and remove from oven.

Chop onions into chunky pieces. Place ground beef and onions in large pan on the stove on medium heat. Once beef is cooked use a strainer to remove the grease and return to the pan. Add a good amount of salt and pepper (you can experiment with other seasonings, I like to add garlic powder) and a few decent splashes of Worcestershire sauce. Put a small amount of vegetables to boil on the stove. Prepare gravy packets; four gravy packets to four cups of boiling water and pour onto the ground beef. Prepare the last two gravy packets with one cup of water to make it thicker and add this too. Add the cooked vegetables also.

Preheat oven to 400 degrees Fahrenheit. Unfold the puff pastry onto a cutting board to prepare for use. Spoon in the beef mixture into the pie dishes onto the par cooked shortcrust pastry until there is enough to reach the top of the pastry (not necessarily the pie dish). Carefully place the puff pastry on top of the pie dishes and cut off the excess on the corners (I use the excess to make some pastry balls in a small dish on the side, you can place these in the oven when you put the pies in). Fold the dough as to seal the edges. 

Beat egg in small bowl and brush the tops of the pies generously all over. Once oven is preheated to 400, place both pies on top shelf. Bake for around 20-30 mins, once the pies are golden brown on the top they are ready (you may want to use a cooking sheet to place on the bottom shelf to catch any mixture that may bubble out of the pies). Remove pies from oven and let sit for at least five minutes before serving. Serve with mashed potatoes, fried potatoes or whatever you fancy. Enjoy!

I also make a beef pie which doesn't use gravy mix and uses diced beef, this recipe will follow soon!

I absolutely love tuna. I think I managed to perfect the recipe for tuna salad over the weekend. My wife said it was the best she had ever had. Simple but effective.

What you will need:

2 or 3 tins of tuna in water (not Albacore and don't use the kind in oil)

1 cup mayonnaise

1 small onion

salt and pepper


Chop up the onion as small as you can get it. Open up the tuna and drain, empty into large bowl and add the onion and mayonnaise. Stir well with a fork until it's all mixed together and add a little salt and pepper to taste (easy on the salt as tuna is already salty). Enjoy in a sandwich or as a side dish in a meal :) (I personally love it with french fries.

These are delightfully delicious and relatively easy to make. A very British dish, I am not sure why the US doesn't really go for them. I suspect it's due to lack of knowledge about them rather than not liking them. Give them a try you will love them! This recipe will make twelve scotch eggs. Bear in mind you will need a deep fryer.

What you will need:

18 large eggs

3 lb pork sausage (can be plain or sage or country, depending on preference)

6 cups seasoned bread crumbs (you can add seasoned salt, or salt and pepper to plain bread crumbs to season)

3 cups all purpose flour


Heat your deep fryer to 375 degrees Fahrenheit (190 degrees c). Whilst the oil is heating boil a saucepan of water. As this is coming to a boil, place eggs in a bowl of very warm water to allow them to adjust to the warmer temperature. Place the eggs carefully into the pan and let boil for seven minutes. Remove from hot water, immediately run under very cold water for a minute then carefully peel.

Beat six eggs in a bowl. Flatten the sausage meat and form a patty to surround each of your eggs and carefully coat each egg generously with sausage. Lightly flour the sausage covered eggs and coat them in the beaten egg. Then roll them generously and evenly in the seasoned breadcrumbs.

Carefully place in deep fryer (you may want to use a spoon to lower them into the oil rather than using the basket as this will stop them cooking into the bottom of the basket). Fry each egg until they are a bit darker than golden brown. Remove them from the fryer and let them cool for a little while. Enjoy your scotch eggs!
This is a traditional British dish. A hearty food, well suited for the cold weather. You will use the same ingredients as the Yorkshire puddings dish for the batter mix. But rather than making a side dish this can be used as a main to go with sides such as mashed potato (I will be posting a recipe for my favourite soon) or Smacked Up Potatoes (my own recipe for great tasting potatoes which will follow soon). Also maybe some vegetables and gravy, I love gravy from a packet so this is ideal to go with this meal.

What you will need:

For the batter (or the hole):

1 cup flour

1 cup milk

1 cup eggs (4-5 eggs depending on the size) 

A pinch of Salt

Oil or cooking spray

For the sausages (or the toad):

16 breakfast sausages

At least 8 rashers of bacon


Begin by pre-heating the oven to 350° Fahrenheit. Place the breakfast sausages on a baking tray at least an inch apart from eachother and place on the centre tray in the oven. You will need to cook these for 10-15 mins until they are starting to brown on the outside. Whilst these are cooking mix all the batter ingredients (except the oil) in a large bowl and whisk until smooth. Set the batter aside to settle for a few minutes. Take out 6 pieces of bacon and cut these in half. Once the sausages are starting to brown, remove them from the oven. Let them cool for a couple of minutes.

You will need to wrap the half cuts of bacon around the sausages. It doesn't matter if they are completely even. Once you have wrapped them, place them back on the baking tray, with the ends of the bacon on the bottom of the sausage touching the pan. Place them back on the oven to cook for a further 10 - 15 mins or until you can see that the bacon is well cooked (crispy if you prefer it like that).

Whilst the sausages wrapped in bacon are cooking. Grease a large pyrex cooking dish (9x13) well with your oil or cooking spray and pour the batter mixture in.

Once the sausages wrapped in bacon are done take them out of the oven and turn the oven up to 450°. Whilst the oven is pre-heating place your sausages evenly amongst the batter, I do 8 either side. When your oven has reached the correct temperature place the pyrex dish carefully on the top tray. Let the dish cook for 15-20 mins. You will see the batter rise considerably around your sausages, perhaps going pretty high (don't worry that is supposed to happen). Once the batter is risen and browning well, remove from the oven. The batter will fall back down but that's okay as it is supposed to happen. Slice up pieces of batter and sausage together and enjoy with potatoes and gravy. Or whatever you want. :) If you have come leftovers, I am particular to dipping it in ketchup when it's cold.
Okay, due to horrific cold weather and ice storms. We lost power last night and it's not long been on. During the scrabble around for candles etc I came across a tin of heinz baked beans and as soon as the power came back on I knew what I was going to make.

What you will need:

1 tin heinz baked beans (see photo, you can get these at the international aisle at most kroger)

Worcestershire sauce



Salt and pepper

Shredded cheese


Heat beans on stove until heated through, add a few splashes of the Worcestershire sauce. Prepare toast whilst they are heating, butter toast well. 

Pour beans over buttered toast, sprinkle with salt and pepper and cheese to desired taste and enjoy! 

I know this recipe is a bit simple, once we can easily get out and buy groceries things will get more adventurous! 
If you're like me, then you love your boiled eggs so the yolk has only just started too cook. So it's not runny, but is still nice and soft.

Now our fridge is so cold that if I drop an egg into boiling water it immediately cracks. So whilst you're boiling some water, put your eggs in a bowl or cup of warm tap water to bring their temperature up.

Once the water is boiling use a slotted spoon to lower your eggs in one by one. Cook for eggsactly seven minutes, no more no less. Remove them from the water with your spoon and immediately run them under very cold water to stop the cooking process. After thirty seconds to a minute gently crack the shell of the eggs and roll them gently on the counter to crack them as much as possible.

Peel them under running water, be very careful not to break them. Enjoy your eggs!
Yorkshires are a British food that go perfectly alongside roast dinners. They are a food that is best described as a kind of eggy savoury roll type food thing. Try them out! You will find what food you like them best with. (I like to fill them with gravy)

What you will need:

1 cup flour

1 cup milk

1 cup eggs (4-5 eggs depending on the size) 


Oil or cooking spray

Baking sheet with 12 muffin holes


Set oven to preheat to 450 degrees farenheit. 

Add all ingredients together (except oil) into a large bowl. Give a generous couple of pinches of salt. Use an electric whisk until you have a smooth batter. Be sure to to get all the lumps out. Leave the mixture to settle for a couple of minutes. 

Grease all twelve muffin spaces well using your oil or cooking spray.

Use a ladle to spoon batter into the spaces until they are about halfway full. Once the oven is preheated to 450 degrees, carefully put the baking tray onto the middle shelf . They normally take around fifteen minutes to cook. Keep checking though as this can vary.

Try not to open the oven door before they are ready as they can fall prematurely. You want them to be golden brown and to have risen considerably. Once they are ready, take them out. Let them sit for a minute then serve immediately. They are a food best devoured fresh! 

This is an easy recipe for very tasty sausage gravy to go with biscuits.

What you will need:

1lb roll ground sausagemeat (regular, sage or country all work, I use regular as I prefer the taste) 

1/4 cup flour

2ish cups milk

Salt and pepper


Empty the roll of sausage into a medium frying pan. Turn stove on medium and separate the sausage as much as possible.

While the sausage is cooking, keep it moving so it cooks evenly and doesn't burn to the bottom of the pan.

Once the sausage is cooked (no pink bits at all), add the flour to the sausage gently. Keep stirring until you can no longer see the flour (be careful to not let the sausage stick to the bottom of the pan at this point).

Once the flour has disappeared, begin to add the milk. You will want to add a generous amount so the sausage is submerged in the milk. Keep on stirring with the heat still on medium and let the mixture thicken. You will want it to get pretty thick. If the mixture is not thickening and you think you've added too much milk, mix some flour and warm water in a cup and add that to the pan.

Keep adding milk until there is a good amount of sauce to the sausage and remove from the heat. Add salt and pepper to desired taste. Pour over biscuits or toast and enjoy!

Easy cake in a mug (in the microwave)! If you're like me and always in a hurry looking for quick easy snacks, give this a try. It will not disappoint. 

What you will need:

1 largish mug

4 Tbsp Bisquick (or any off-brand pancake mix) 

4 Tbsp water

2.5 Tbsp sugar

2 Tsp oil

1 Tbsp imitation vanilla extract

2 Tbsp cocoa (optional , if you want a chocolate cake add this, if not it still tastes great without) 


Combine all ingredients in the mug and hand whisk until a smooth batter has formed. Once the mixture is as smooth as possible, place mug in microwave. Set timer to 1 min 45 secs and microwave on high.

Once this is done let sit for 30 secs and remove from microwave (careful, mug will be hot!) then simply spoon in some of your favourite ice cream, or leave it as it is and enjoy!
